Pernand Premier Cru "Ile de Vergelesses"

A great Burgundy red wine from the Pernand-Vergelesses commune. The grape variety used is Pinot Noir. This parcel is more than 50 years old.

Red wine vinification : We aim to obtain fruity wines, rich in blended tannins, which is the mark of well ripened grapes. We bring in the grapes in small crates for careful sorting in the winery; a conveyor belt is used for filling the tanks in order to respect the grapes. The fermentation lasts 15 days with pigeages, punching down of the cap, allowing the wine to soak up the richness and the colour from the grape-skins before pressing. Ageing takes place in barrels of which 20 % are new. Racking by the means of a bellow eliminates the need for a pump. All these precautions limit handling of the grapes and the wine as much as possible, thus preserving all the richness.

This "climat" *, situated between that of Vergelesses de Savigny and those of Pernand, is bordered by two pathroads above and below. It thus virtually forms an «island » halfway up this slope composed of limestone as well as ferruginous soil. The location is perfect with enough soil to produce great red wines on a slope just gentle enough to drain the ground preventing the noble grapes from rotting. The wines, perfect for cellaring, are remarkable for their tenderness, finesse and elegance. They have sufficient body to age for at least ten years. It's great subtlety and femininity distinguishes it from other wines, and it is appreciated for being lively, cheerful and smooth.

Le Pernand 1 er cru île des Vergelesses perfectly suits beef tenderloin, veal sauté, lamb shoulder laquée, duck fricassée prepared as coq au vin and, to finish off, a selection of delicious cheeses. Serving temperature : 15°C.
